Dehydrating

Dehydrated fresh fruits/veggies have the highest nutrient content next to fresh.  If you dehydrate your frozen veggies they move from 1 yr lifespan in the freezer to many many years depending on storage conditions.
The Dehydrator used in these videos is an Excallibur...the Cadillac.  The key to a good dehydrator is having the fan in the back that blows to the front of the dehydrator.  I ordered mine (Weston) online from Wal-Mart...if you set it next to the Excalibur I can't tell the difference and it was about $125 vs almost $300.  I love it and it works great. 
I can dehydrate 4 to 5 lbs spinach and it goes into a qt jar.....the world may fall apart but I'll have my spinach! yeah!
Onion rings are a great snack.....yummo! Tomatoes are to die for and we've even done all sorts of Pasilla,  Jalapeno, Red, Yellow and Green  peppers.
When you have dehydrated foods you are never left without what you need.....no runs to the grocery store at the last minute when you realize you don't have what you need.  The taste is far superior to canned.
