Megan's Granola

 This is one of those 5 star recipes that really does measure up to it's rating.  I used to have a Granola recipe years ago from Linda Levie but I lost it somehow...Linda doesn't remember it but I sure do!!!!.........yummo!.....I had to sift thru and try lots of other recipes to find one I thought was as good.  I added coconut and flax seeds.   I substituted Coconut oil because it is more healthy.  It is worth the extra dollars to make this one!   Enjoy!   (approx 40 servings)

A good addition to your 3 month supply (see 90 meals in 18wks program) We are now supplementing the program with Breakfast ideas.

Megan's Granola
8 cups rolled oats  (can stretch it by using 10cups)
1 1/2 C wheat germ
1 1/2 C oat bran
1/2 C sunflower seeds
1 C finely chopped almonds
1 C finely chopped pecans
1 C finely chopped walnuts
1 1/2 tsp salt
1 C flake coconut
1/2 C brown sugar
1/4 C maple syrup
3/4 C honey
1 C Coconut Oil (or veg oil)
1 Tbsp ground cinnamon
1 Tbsp vanilla
2 C raisins or sweetened dried cranberries (we like cranberries!)
1/2 C flax seeds

1.  Preheat the oven to 325 degrees.  Line 2 large baking sheets with parchment or aluminum foil.
2.  Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans and flax seeds in a large bowl.  Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon and vanilla in a saucepan.  Bring to a boil over med heat, then pour over the dry ingredients and stir to coat.  Spread the mixture out evenly on the baking sheets.
3.  Bake in the oven until crispy and toasted, about 20 minutes.  Add the coconut the last 10 minutes and stir.    Cool, then stir in the raisins or Cranberries before storing in an airtight container.  

Tip:  I learned somewhere along the way to boil the sugar and oil to help it "clump".  If you don't like your Granola to clump then you skip this tip!

If using Convection oven:  200degrees for 50 min. 

1/2 C Granola and a little milk and you are set for breakfast!  Let me know what you think!  deb
