Berries are known as the "Crown Jewels" of summer because of their disease fighting properties. Berries are loaded with antioxidants......so.......mixed with Oats......well, what more is there for a body to love?
I too use the frozen berry mix from Costco or Sam's Club but fresh fruit would be yummy. You can use any frozen berry mix from the grocery store. The idea behind the frozen fruit is that it makes a "sauce" when it is warmed in the microwave.
Tomorrow is Fast Sunday so we'll be trying this out Monday!!!!! Tim says he'll make the sacrifice.

Baked Oatmeal with berries
This
is a super weekend breakfast recipe. I found it in a great Taste of
Home cookbook. It tastes quite a lot like warm oatmeal cookies. You
heard me….warm oatmeal cookies for breakfast. My kids were thrilled!
You simply mix up the batter, spread it evenly on a sprayed cookie
sheet and bake for about 25 minutes. We had ours with warm berries, milk
and brown sugar. It’s a great use of your food storage staples.
Baked Oatmeal with Berries
Yield: 6 servings
1 ½ C quick cooking oats (I used regular)½ C sugar
½ C milk
¼ C butter
1 egg
1 t baking powder
¾ t salt
1 1/2 t vanilla
Milk (we didn't use)
Frozen mixed berries, warmed in the microwave (I buy them in a big bag at Costco)
Brown sugar (we didn't use)
1. Combine the first 8 ingredients together and mix well.
2. Spray a large cookie sheet with cooking spray and spread the batter out evenly. (I cooked it on a parchment sheat....easier clean up!)
3. Bake at 350 for 25-30 minutes, or until golden brown.
4. Serve with milk, warm berries and brown sugar.
Key we think is to have a Berry "sauce". Say if you had Strawberries and you put a little sugar on them and they give off a nice sauce as they sit. Let them "sweat" as they say.
