I've been reading a lot on "Depression Era Cooking"..........lots of ideas that one would not even think of, yet a good source of knowledge for times when something unforeseen takes the food budget and we are staring at empty cupboards.....
I will be sharing some recipes we can assemble .......
these are the recipes we want to print off and keep in a folder just in case.
This video is "Clara" she is 94 and recounts some of her Depression memories and shares her recipe for "Panecotto" (Baked Bread) I must admit I have fallen in love with Clara and have ordered her book. I did try this recipe with an old Bagette that I kept for this reason. I was as hard as a bat. I'm not kidding-----it was rock solid hard! And............to my surprise..............it tasted good. Crunchy and soft. Loved the flavor!
I could see a few bacon bits and some cheese......anything that happens to be around at the time.
