Well..............since we have a bumper crop of zucchini we have been cooking all things zucchini today. We have "chips" in the dehydrator, a casserole in the fridge and these babies will make you think you have died and gone to Heaven! Very crispy with a hint of heat! Had 3 taste testers saying "these are better than any restaurant!" (that's always a good sign to me)
Batter:
1/2 C flour
8-9 Tbsp ice water
1 tsp salt
1/4 tsp pepper
1/2 tsp baking powder
1 tsp cayenne
mix ingredients, adding water until you have the consistency of pancake batter.
Dredges:
Italian bread crumbs (or your own bread crumb recipe....you are the boss!) Mix some Panko in ..........gives a real crunch.
Cut up 3 med zucchini (unless you have porkers like me and then you will use about 1/3 of it.....lol .....................say about 1 lb. You may skin them or not.....again..........you choose).
a small amount of flour in a bowl.
process:....................
1. roll in a little flour (helps batter to "stick")
2. with a fork..........add each stick to the batter to coat and then to the breadcrumbs. set on a plate for 10-15 min (the secret to not having your batter slide off the stick..... Let the batter/breadcrumb mixture harden/dry a wee bit).
3. Drop several into 350 degree oil and fry until golden brown. Remove to paper towels & serve with Marinara sauce or Ranch dressing.
Hint: better double the batch..................they will disappear faster than you can cook them up!
