Zucchini Chips...............Oh my.........can we say Gooooood!!!!!! Better than any potato chip and I'm not even a zucchini fan..........or wasn't till now. We are over run with zucchini here in the garden..........sent them all home with class last night and woke up to more of these babies! Blink your eyes and they are 2.5-3Lb...............yikes!
now for the recipe:
Slice zucchini on a mandolin or in your food processor about 1/16" (they will shrink in dehydrating process so they can't be paper thin or you won't get them off the grate).
Lay on dehydrator rack. Sprinkle with Zucchini Seasoning (recipe below) and insert racks. Setting should be Veg 120-125 degrees. (heck........in a week or so here in Havasu u can dehydrate them on your patio.......lol
These chips are "crispy" and to die for!
Zucchini Chip Seasoning:
4 1/2 Tbsp onion powder
4 1/2 Tbsp garlic powder
4 1/2 Tbsp MSG (yes......but hey no oil or potato)
2 Tbsp pepper
2 Tbsp chili powder
2 tsp Hungarian paprika
1 tsp Jalapeno flakes (dehy/ground)
Salt to taste (we started with French Fry seasoning I got at Big Lots for $1............waaaaaay to salty so I just re-added the same ingredients and made a quadruple batch with no more salt............enough for the Millennium but hey......I don't know how to do anything on a small scale. If you need a bit give me a call..........lol...................I may even throw in the zucchini!
you will notice this recipe does not call for "oil" on the zucchini..............get the seasoning on while they are newly sliced and a bit wet.
PS...........don't forget to vacuum seal them in quart jars so they will stay fresh and crispy! Great for a food storage "treat" item. Could be re-hydrated and used other ways also.....in soups, casseroles, etc.
