Breakfast Recipe #4 Oatmeal Blender Pancakes

Oatmeal Pancakes
Oatmeal Pancakes
Yield: about 12 pancakes
Time: 15 minutes
Recipe from my dear friend Amy Howells
2 1/2 C milk
1/3 C oil
2 eggs
1 t salt
2 1/2 t baking powder
2 C oatmeal
1 C whole wheat flour (or you may use regular flour)
1. Place all ingredients in your blender and give it a whirl. Make sure all of the ingredients are blended up smoothly.
2. Let the batter stand for 2-3 minutes to thicken.
3. Cook on a hot griddle and serve with butter and maple syrup.

90 Meals Plus - Breakfast Recipe #3

Wow! this looks yummy.......going to try it this week.  I don't  post recipes I haven't tried....but this looks so good that I'm going to make an exception.  My hubby loves granola so I'm going to try this one.  Let me know what you think if you try it. What is great about this is YOU control the amount of sugar......Update.....tried this today for breakfast.  Amazing!  We didn't add the brown sugar or milk as the "granola" base is sweet enough.  We used some leftover berries in the fridge and added 1 Tbsp of whipped cream on the top.......one of my best Birthday breakfasts yet!!!!!!!

Berries are known as the "Crown Jewels" of summer because of their disease fighting properties.  Berries are loaded with antioxidants......so.......mixed with Oats......well, what more is there for a body to love? 

I too use the frozen berry mix from Costco or Sam's Club but fresh fruit would be yummy. You can use any frozen berry mix from the grocery store.   The idea behind the frozen fruit is that it makes a "sauce" when it is warmed in the microwave.

Tomorrow is Fast Sunday so we'll be trying this out Monday!!!!!  Tim says he'll make the sacrifice.

Baked Oatmeal with berries

Baked Oatmeal with berries

This is a super weekend breakfast recipe. I found it in a great Taste of Home cookbook. It tastes quite a lot like warm oatmeal cookies. You heard me….warm oatmeal cookies for  breakfast. My kids were thrilled!  You simply mix up the batter, spread it evenly on a sprayed cookie sheet and bake for about 25 minutes. We had ours with warm berries, milk and brown sugar. It’s a great use of your food storage staples. 
Baked Oatmeal with Berries
Yield: 6 servings
1 ½ C quick cooking oats (I used regular)
½ C sugar
½ C milk
¼ C butter
1 egg
1 t baking powder
¾ t salt
1 1/2 t vanilla
Milk  (we didn't use)
Frozen mixed berries, warmed in the microwave (I buy them in a big bag at Costco)
Brown sugar  (we didn't use)


1. Combine the first 8 ingredients together and mix well.
2. Spray a large cookie sheet with cooking spray and spread the batter out evenly. (I cooked it on a parchment sheat....easier clean up!)
3. Bake at 350 for 25-30 minutes, or until golden brown.
4. Serve with milk, warm berries and brown sugar.

Key we think is to have a Berry "sauce".  Say if you had Strawberries and you put a little sugar on them and they give off a nice sauce as they sit.  Let them "sweat" as they say.

Megan's Granola

 This is one of those 5 star recipes that really does measure up to it's rating.  I used to have a Granola recipe years ago from Linda Levie but I lost it somehow...Linda doesn't remember it but I sure do!!!!.........yummo!.....I had to sift thru and try lots of other recipes to find one I thought was as good.  I added coconut and flax seeds.   I substituted Coconut oil because it is more healthy.  It is worth the extra dollars to make this one!   Enjoy!   (approx 40 servings)

A good addition to your 3 month supply (see 90 meals in 18wks program) We are now supplementing the program with Breakfast ideas.

Megan's Granola
8 cups rolled oats  (can stretch it by using 10cups)
1 1/2 C wheat germ
1 1/2 C oat bran
1/2 C sunflower seeds
1 C finely chopped almonds
1 C finely chopped pecans
1 C finely chopped walnuts
1 1/2 tsp salt
1 C flake coconut
1/2 C brown sugar
1/4 C maple syrup
3/4 C honey
1 C Coconut Oil (or veg oil)
1 Tbsp ground cinnamon
1 Tbsp vanilla
2 C raisins or sweetened dried cranberries (we like cranberries!)
1/2 C flax seeds

1.  Preheat the oven to 325 degrees.  Line 2 large baking sheets with parchment or aluminum foil.
2.  Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans and flax seeds in a large bowl.  Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon and vanilla in a saucepan.  Bring to a boil over med heat, then pour over the dry ingredients and stir to coat.  Spread the mixture out evenly on the baking sheets.
3.  Bake in the oven until crispy and toasted, about 20 minutes.  Add the coconut the last 10 minutes and stir.    Cool, then stir in the raisins or Cranberries before storing in an airtight container.  

Tip:  I learned somewhere along the way to boil the sugar and oil to help it "clump".  If you don't like your Granola to clump then you skip this tip!

If using Convection oven:  200degrees for 50 min. 

1/2 C Granola and a little milk and you are set for breakfast!  Let me know what you think!  deb

Apple Muffins

Apple Muffins - Meal in a Jar Recipe
A yummy addition to the 90 Meals ---this time a Breakfast!  This recipe also makes a great gift!  Consider making 5 Jars as a Breakfast addition to your 90 Meals. 
Walnuts would be a great addition in this recipe.  Lock the doors.....someone took one of my muffins before I could even snap a picture.......now who would do such a thing?  lol  Enjoy! deb
PS If you haven't done your 90 Meals in 18weeks......start there!














  
Apple Muffin Mix:
1/2 C sugar
1 1/2 tsp baking powder
1/4 C brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 C chopped dried apples
2 C flour

Layer the ingredients in the order given into a wide-mouth Qt jar.  Pack each layer in place before adding the next ingredient.  Don't forget your Oxygen Absorber or it won't store long term. 

Apple Muffins:
1 Jar Apple Muffin Mix
1 egg, slightly beaten
3/4 C milk
1/4 C oil
Preheat the oven to 400 degrees.  In a large bowl, combine the Apple Muffin Mix with the egg, milk and oil.  Stir until the mixture is just blended.  Do not over mix.  Spoon the batter into greased muffin tins, filling about 2/3 to 3/4 full.  Bake for 15 to 18 minutes, or until golden brown.  Serve warm or cool completely on a wire rack.  Makes 12 muffins. (don't forget to take your Oxygen Absorber out and throw it away)

Attach a gift tag with the mixing and baking directions.
