Good Morning!!!!   Sure feels like summer here in Lake Havasu.  With that thought I'm turning to quick and easy........no fuss things like 3 Bean Salad.  This is so good!  This is one of those recipes that tastes better the longer it sits.  A great side as these ingredients are in our pantrys......or should be.  If you are just beginning to increase your pantry please see the post labeled "3 Month Pantry List".  This is a great starting point guide to a fully stocked pantry that will enable you to cook most any recipe without going to the store.  (very helpful during this Pandemic)  It's a family favorite and a definite "keeper".   Enjoy!  deb



3 Bean Salad


Ingredients:
1 (15oz) can green beans (drained)
1 can wax beans ……or garbanzo (drained)
1 can kidney beans (drained)
1 red onion, sliced
¾ c white sugar
2/3 c distilled vinegar…….or vinegar of you choice
1/3 c vegetable oil
½ tsp salt
½ tsp ground black pepper
½ tsp celery seed
Parsley to taste
Instructions:
Mix together all ingredients and let set in refrigerator for at least 12 hours.

Pork Carnita Soup






PORK = YUM.  I can't believe that there are people in this world that don't eat pork. OMGoodnes!  Never having a pulled pork sandwich - the tragedy!   This soup is wonderful!
and............1.17 @ lb (at Basha's this week) makes it taste even better!!!!                                          This will go together in about 15 min ............easy peasy

8 cups chicken broth (I also added what broth was left over from cooking the pork after I cooled it  and removed the fat)
3-4 pounds left  over
pork carnitas (I used about 2-3 cups                                                                   small onion - diced
juice of 2 limes    -   I didn’t have limes so it didn’t go in
3 garlic clove
1 bunch of cilantro  - I used 1 Tbsp dried cilantro cause that’s what I had
left over
black beans
1 can sweet corn – I used ½ bag frozen
1 TBL Cumin (or more to taste)
1-2 chipotle chilies in adobo sauce - chopped
salt to taste

Combine chicken broth and onions, bring to a boil, add all other ingredients, cook for about 15 minutes.  Dinner is DONE!   Also………feel free to add any veggies you like …..I added 2 small potatoes.

Toss a few diced fresh tomatoes and some queso fresco cheese on top and you are all set to dig in!  (A little avocado would be good too, I just didn't have any.)

Buttermilk Ranch Dressing

This is quick and easy...........and is now our "go to" Ranch dressing!!  Try it and see what you think. 

1 C Mayo (can sub 1/2 c buttermilk for part of the mayo if you wish)
1/2 C sour cream
1 tsp chives, dried
1 tsp parsley, dried
1 tsp dill, dried
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp ground pepper
1/2 tsp white vinegar

Sarah Stucki Gale's Canned Apples
wow.............I'm so impressed..................don't they look yummy?  I remember Sarah and Zoe as young women..........examples then and examples now...........doesn't it make you feel good to know we have such strength to carry on the next generation? 

here's her recipe:
"I canned apple pie filling which can be used for lots more than just pie. Very simple recipe. Slice apples and fill jars, mix 4 1/2 cups of sugar, 2 tsp of cinnamon, 1/2 tsp of nutmeg, 2 tsp of salt, 2 cups of ultra jel for pie filling mix with 10 cups of water. Bring to a boil mixing constantly. When syrup is thick and bubbly, add 3 tbsp of lemon juice. Pour over apples. Should fill 7 to 8 quart jars."  Process in water bath.

and ........of course...........she used those special Utah apples! 

7 up Bisquits

Howdy!
If you are looking for a biscuit that is light, light, light and over the top...... melt in your mouth delicious.... yet easy to do............look no further than these little gems.............you can get them in the oven in about 3minutes and just a tip..........you better hide them because they won't be around come dinnertime!  As you can see.........we didn't even make the photo before they started to disappear!


Tip:  Cut in the sour cream and THEN add the 7 up---if you just dump it all in they won't be as light.  You will want to cut in sour cream to about bean size.  I used a 9 x 12 casserole dish.  Cut in squares with a pastry cutter......be sure to put extra Bisquick on the board before you pat the dough out............Enjoy!..........deb
