Albondigas Soup!


I just love the cool weather and I can eat soup.......not that we don't eat soup even in the summer but nothing warms your innards like a good bowl of soup.  This is one of my favorites and my spin on a soup we used to get at a restaurant in California........it's what's for dinner tonight.......enjoy!  deb



Albondigas Soup
1 lb Hamburger                                  2 potatoes, diced in large chunks (don't bother to peel)
1/3 C rice                                            1 Celery, sliced into chunks
1 tsp Onion powder                            1 Carrot, sliced into chunks
½ tsp Garlic powder                            1 tsp Comino                                      
4 C water with 4 bouillon cubes         ½ each Yellow and Red Bell Pepper, in chunks
½ C Breadcrumbs                               2 cans chicken broth
2 eggs                                                  Jalapeño flakes (gives it a little Kick!)
Onion, chopped                                   1 can whole peeled tomatoes
1 tsp Parsley                                         1 tsp cilantro
                                   
Add the water, bouillon and bouillon cubes and bring to a simmer over med heat.  Chop veggies and add to the pot.  Add Jalapeño flakes (opt).  Make meatballs and add to the broth.  Add whole tomatoes with juice.  Add Parsley and Cilantro.  Simmer for 10-15 min or until veggies are tender.

Meatballs: 1 lb hamburger, 1/3 C rice, onion powder, garlic powder, cumin, ½ C breadcrumbs, 2 eggs.  Mix and shape into balls with small ice cream scoop.  Drop into simmering broth.
