Zuppa Toscana Soup (Olive Garden)

Happy New Year Everyone!  May 2014 bring you much love, happiness and success!

Why is it the older one gets the faster the years seem to fly by?  I wonder if there's a scientific reason for that.  lol

Who doesn't love Olive Garden ......yummo!  This recipe was actually submitted to Cooks.com by Olive Garden........or so it says.  Anyway.......it's a keeper!  Serve it with Naomi's Rolls......very easy. Naomi's Rolls recipe on the following blog..........very budget friendly meal

 

Zuppa Toscana Soup  (Olive Garden)

1 lb ground Italian sausage (I sometimes use regular sausage)
1 1/2 tsp crushed red peppers
1 lg diced white onion
4 Tbsp bacon pieces
2 tsp garlic puree
10 cups water
5 cubes of chicken bouillon
1 C heavy cream
1 lb sliced russet potatoes (about 3 large)
1/4 of a bunch of Kale

Saute Italian sausage and crushed red pepper in pot.  Drain excess fat and transfer to a plate or bowl while you prepare other ingredients.  In the same pan, saute bacon, onions and garlic for approximately 15min or until the onions are soft.  Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic.  Cook until boiling.  Add potatoes and cook until soft, about 30min.  Add Kale, sausage and cream and cook until thoroughly heated.

PS the red peppers give this soup a bit of a kick.........very warming on a cold winter's day.

This recipe can easily be adapted to a Meal in a Jar recipe or if you have canned sausage, etc a Pantry Meal.................
