Pork Carnita Soup






PORK = YUM.  I can't believe that there are people in this world that don't eat pork. OMGoodnes!  Never having a pulled pork sandwich - the tragedy!   This soup is wonderful!
and............1.17 @ lb (at Basha's this week) makes it taste even better!!!!                                          This will go together in about 15 min ............easy peasy

8 cups chicken broth (I also added what broth was left over from cooking the pork after I cooled it  and removed the fat)
3-4 pounds left  over
pork carnitas (I used about 2-3 cups                                                                   small onion - diced
juice of 2 limes    -   I didn’t have limes so it didn’t go in
3 garlic clove
1 bunch of cilantro  - I used 1 Tbsp dried cilantro cause that’s what I had
left over
black beans
1 can sweet corn – I used ½ bag frozen
1 TBL Cumin (or more to taste)
1-2 chipotle chilies in adobo sauce - chopped
salt to taste

Combine chicken broth and onions, bring to a boil, add all other ingredients, cook for about 15 minutes.  Dinner is DONE!   Also………feel free to add any veggies you like …..I added 2 small potatoes.

Toss a few diced fresh tomatoes and some queso fresco cheese on top and you are all set to dig in!  (A little avocado would be good too, I just didn't have any.)
